If you know me well, you know that I am not the hugest fan of avocado. I eat it every once in a blue moon, hoping I’ll be head-over-heels in love with the dark rough-skinned tear drop fruit but I haven’t seen the day. Yet, it came close when I attended the intimate luncheon with Susan Feniger and Mary Sue Milliken a couple of weekends ago at Ciudad. Every dish the duo created contained what else? Avocado! I must admit, what they created was damn good…so perhaps avocado and I will find harmony one day. Hopefully soon! This guacamole recipe may be the gateway to that harmony I seek…
In my Wordless Wednesday post last week, I mentioned the Top Chef Guacamole Challenge Susan Feniger had us food bloggers participate in and did I mention Jen from Domestic Divas Blog and I won 2nd place for our guacamole dish? Well, we did. A close 2nd! Yay us!
We decided to recreate the guacamole and create a short video for it. This was my 1st cooking shoot! I use the term “cooking” loosely because I actually didn’t cook anything; I assisted Jen while she assembled the guac and of course…adding my nutritional perks into the clip! How could I not!

Award Winning Pomegranate Guacamole (aka Antioxiguac)
– 2 avocados, seeded and peeled
– 1/2 cup pomegranate seeds
– 1 Tbs fresh basil, chopped
– 2 tsp ground cumin (I love that smoky background flavor!)
– 2 Tbs jalapenos, seeded and chopped
– 2 Tbs spring onion, chopped
– juice of one lime
– sea salt and pepper to taste
Prepare your appetite and some chips.
Add the avocados to a bowl and gently mash with a fork and leave some chucks for texture; it makes all the difference. Then, add the remaining ingredients and mix together. Add salt and pepper to taste. Serve with corn chips. Enjoy over and over!
