Temperatures are soaring and my appetite for light meals and cool eats is rising. I like this relationship because I truly enjoy light meals and cool grub.
In my house, fruit is always available. I actually feel like a fish out-of-water if I don’t have fresh produce in my inventory. Does anyone else feel this way? If so, we’d make great friends!
I was recently in the mood for a smoothie. Why not?! Smoothies are pretty darn good. Nevertheless, I wanted to create a fruity and cool lassi. A pink lassi…how about a strawberry and banana lassi?!
What’s a lassi? A lassi is a yogurt based drink found in Pakistan and India. The most common lassi is a mango lassi, which is a combination of yogurt, water or milk, sugar and mango and topped with spices. You can learn more about lassis here.
Rather than going the traditional route, I created a mouth-watering strawberry and banana lassi, sprinkled with yellow curry powder. It’s a yummy alternative if you don’t have mango, you’re allergic to mango or simply don’t like it. This strawberry and banana lassi is refreshing and the curry is a nice and subtle touch!
Nutritional perks –
- Strawberries – They pack a punch! Strawberries protect the heart, help prevent cancer and are anti-inflammatory. They also help protect against rheumatoid arthritis.
Bananas – A great source of calcium and an excellent source of potassium. The high presence of potassium helps promote bone health.
Strawberry and Banana Lassi
– 1 cup fresh strawberries, halved
– 1 medium banana, sliced
– 1/2 cup low fat or non-fat Greek yogurt
– 1/4 cup low fat or non-fat milk
– 1 tsp agave nectar, honey or evaporated cane sugar
– 1/4 tsp yellow curry
Place the first five ingredients into a blender and give it a whirl! Pour into a drinking glass and sprinkle yellow curry on top. Stirring the curry into the lassi is surprisingly good!
